- 1 tsp Coriander leaves

- Cut beetroot into small pieces.Grind beetroot,ginger with 11/2 cup water.


- Mix gram flour and curd.Add beetroot juice and salt.Now strain the batter.



- Pour the batter in a pan and cook on a medium heat.Keep it stirring to avoid lumps.

- When the batter becomes thick,check it.Take a small plate,pour 1 t.spoon. batter on it and spread,let it cool then see if it is ready to roll. If the roll is sticky,it means you have to cook the batter for some more time.

- When the batter is ready,take a thali,on the back of the thali,spread it evenly with the help of a spatula.
- After 10 min. cut it vertically about 2 inches wide.
- Sprinkle coconut, Seasame seeds and coriander leaves over it.

- Now roll each strip and keep it in a plate.Your nutritious beetroot khandvi is ready to eat.
